Hanna Stína og Guðmundur
Hanna Stína og Guðmundur komu í mat til okkar á föstudagskvöld. Vorum með sushi og svo kjúklingaspjót með appelsínum og svo kom Hanna Stína með eftirrétt sem var mjög góður með ferskum ávöxtum, makkarónum og rjóma.
Svo á laugardag fórum við upp í bústað þar sem alltaf er gott aðkoma og útsýnið alltaf jafn fallegt.
Orange and soy chicken skewers
Serves 4
Ingredients
4 skinless chicken breasts
Juice and zest of 1 orange
5 tbsp of dark soy sauce
2 cloves of crushed garlic
1 tbsp of olive oil
2 tbsp of chopped coriander
1 whole orange cut into wedges
8 large skewers soaked in cold water
Method
Cut each chicken breast into four equal pieces and put into a zip lock food bag. Next add the soy, orange juice and zest, crushed garlic, olive oil and coriander. Seal the bag and rub all ingredients together. Leave to marinade in fridge for around one hour.
Next take the soaked wooden skewers and spike two pieces of chicken and two pieces of orange wedges onto each skewer leaving a slight gap between each piece. Discard any remaining marinade.
Place the chicken skewers on a medium heat BBQ for 10 minutes, turning occasionally through cooking.
